Fried Radish Nuggets

1.Peel the radish and grate coarsely with the raw vegetable grater. Mix with 1 tsp sea salt flakes and let it sit for 15 minutes.

Preheat the oven to broil level. Whisk together the eggs, almonds, parsley and Parmesan. Squeeze the radish flakes well, mix in and season with pepper. Heat olive oil in a non-stick frying pan.

Add the radish mixture by the tablespoonful and fry the nuggets on both sides for 3-4 minutes until golden brown.

Meanwhile, mix the olives well with the powdered sugar, place on a baking sheet and toast and caramelize in the preheated oven for about 5 minutes, checking often as the sugar can burn quickly.

Remove from oven and coarsely chop the caramelized olives. Blend sour cream and honey until smooth and season with sea salt flakes and pepper.

Divide radish nuggets between two plates. Top each with a small blob of honey sour cream and garnish with caramelized olives.
