Have fun preparing this mushroom dish!

Heat the oil and cook the garlic in it for about 1 minute, stirring constantly. Mix in curry paste and turmeric and stir fry for 30 seconds.

Add the straw mushrooms and ginger and stir-fry for 2 min. Pour in the coconut milk and let it all bubble up.

Add the shiitake mushrooms. Add sugar, juice of one lemon, soy sauce and salt and heat thoroughly. Gently fold in the tomatoes and tofu.

Sprinkle the dish with coriander leaves and serve on the spot with cooked fragrant rice.
