For the fried pollock fillet, drizzle the fish with fresh lemon juice. Sprinkle generously with sea salt and ground mountain pepper and allow to soak in a little. Carefully turn the fillet in a little flour.

Heat olive oil in a pan and fry the pollock fillet on both sides until cooked through. The fish should be crispy on the outside and still slightly glazed on the inside.
