For the fried egg cake, drain the apicot halves and collect the juice. Prepare a batter from butter, sugar, flour, eggs and baking powder and place in a well greased springform pan (26 cm).

Bake at 180 degrees for about 30 minutes until golden brown. Cook a pudding from vanilla pudding powder and milk according to package instructions and let cool. Mix whipped cream, mascarpone and vanilla sugar and add to the cooled pudding.

Pour the cream onto the cooled base and bake for another 30 minutes. Let cool and cover with the apricot halves with the bulge facing up.

Prepare the cake glaze according to the package instructions with the collected juice (if it is not enough, fill up with water). Then pour this over the entire fried egg cake.
