Instructions:

(Melon flambe au pastis) * In a frying pan, heat the olive oil.

* Cut out about 30 balls from the pulp of the melon and toss them in the oil for four minutes, steaming them.

* Warm the pastis in a glass, light it and pour it over the melon balls.

* Boil for two minutes on low heat. Bring to the table hot.
