Instructions:

Cut the bread into small cubes and soak in lukewarm milk. Put the trout fillets through the fine disk of the meat grinder and mix with the soaked bread.

Stir in the egg, shallot and parsley and season the mixture with salt and freshly ground pepper. Make a test dumpling and cook it in boiling salted water for 10 minutes. If the dumpling does not hold, mix in a few more breadcrumbs, then twist off into dumplings, poach in salted water.

For the sauce, sauté the shallot in butter and dust with flour. Pour in the fish stock, cook for a few minutes, add whipped cream and cook again a little. Add the capers with the stock and season well with salt and freshly ground pepper.

Arrange the fish dumplings, cover with the sauce and bring to the table.
