For the fir honey, harvest the green fir tips between the end of April and May. Wash hot, cover with water and boil until the fir tips are no longer colored.

Leave to stand overnight. The next day, strain the fir tips, measure the decoction and boil it (so you know how much sugar you need -> one kilo of sugar per liter).

Add the lemon and orange juice and simmer for about 4-5 hours. With the help of the jelly test you can see if the honey is already thick enough. (It will not be as thick as ordinary honey).
