For the fillet steak with Gorgonzola pear, sprinkle the steaks with pepper and fry in hot olive oil on one side for about 3 minutes.

Peel pear, quarter, remove core and drizzle with lemon juice.

Turn steaks to other side and top with pear quarters and cheese. Close pan lid and broil for another three minutes.

Arrange steaks on plates and boil up gravy with whipped cream. Refine with cognac and season with salt and pepper.

Serve the fillet steaks with Gorgonzola pear with the gravy on the side.
