Instructions:

For the filled ham pancakes, whisk flour, eggs, milk, salt, nutmeg and mineral water to a dough and let it swell a bit. Melt butter in a pan and fry the pancakes in portions.

For the filling, peel and dice onions. Peel and chop garlic. Tear ham into small pieces. Sauté onions with garlic in a little butter until translucent, then add ham and keep stirring. Stir in sour cream and crème fraîche and season with salt, pepper and nutmeg.

Wash basil leaves, shake dry and pluck. Place the ham filling in the middle of the pancakes, fold and serve the filled ham pancakes garnished with basil leaves.
