Instructions:

For the gingerbread, heat the honey, quickly mix with the remaining ingredients to form a dough and chill (let rest for about 1-2 hours).

Roll out half of the dough until it is about 4 mm thick and place on a baking tray lined with baking paper.

For the filling, mix well the nuts or almonds, raisins, arranzini and candied lemon peel, apricot jam, grated lemon zest and rum and spread on the dough.

Roll out the second half of the dough to a thickness of about 4mm and cover the first sheet with the filling. Close the edge well and bake at about 180 degrees Celsius.

When the gingerbread is done baking, cut it into cubes while it is still hot. Put the gingerbread in a storage tin and seal well.
