Rinse and clean the fennel, setting aside the greens. Cut the bulbs diagonally into narrow slices and spread evenly on plates.

Grind salmon in a hand mixer, add egg yolk and juice of one lemon. While stirring, add oil and yogurt, seasoning with salt and pepper. The salmon mayonnaise on the fennel form and sprinkle with the freshly chopped fennel greens.
