Instructions:

Cut fennel, orange and cucumber into very fine strips and mix.

Stir the juice of one lemon, oil and mustard to a creamy sauce, season generously with salt and freshly ground pepper and fold into the leaf salad. Garlic can be added, depending on your taste.

Sprinkle with finely chopped fennel greens and walnut kernels and perhaps

arrange on lettuce.
