Clean the fennel and cut into fine strips. Squeeze half of the grapefruit, boil the fennel strips in the freshly squeezed juice until soft. Remove, boil the juice with the sweet thickened pear juice. It should become thick like syrup.

Fillet remaining grapefruit. Arrange the fennel and grapefruit wedges alternately on plates, pour the thickened sauce over them and sprinkle with toasted almond flakes.
