Perhaps your new favorite bean dish:

Drain the soaked beans, rinse under cold running water and place in a large saucepan. Add water and make ten minutes. Reduce heat, cover the saucepan and simmer on low heat for thirty min.

Pour in carrots, onions, garlic, celery, oil, sugar, thyme, bay leaf and tomatoes with juice. Mash tomatoes with a fork. Bring back to a boil, cover and simmer gently for forty-five to sixty minutes.

Season the soup strongly with salt and freshly ground pepper, sprinkle with olives and parsley and serve hot.
