Instructions:

For falafel burgers with mint yogurt and baby cucumber, first prepare yellow burger buns.

For the falafel, drain chickpeas and rinse with water. Wash and grate lemon, then squeeze juice. Peel garlic and chop onion into coarse pieces. Wash parsley and cilantro and pluck leaves. Cut chili in half lengthwise and remove seeds. Puree all ingredients in a kitchen blender to a creamy mass. Form small dumplings from the mixture and then fry in hot oil until golden.

For the mint yogurt, mix all ingredients together well.

Wash the cucumbers and cut lengthwise into strips with a peeler.

Cut off garden cress with scissors.

Cut buns into halves and toast in a pan without fat.

Arrange falaffel, cucumber, yogurt and cress pleasingly between the bun – halves and serve falafel burger with mint yogurt and baby cucumber.
