Fagioli Al Fiasco – Beans in the Bottle

A bean recipe for every taste:

For 6 to 8 servings

Soak the beans in cold water for one night (only if they were dried, of course). Drain the water. Cut the chili pepper in half and remove the seeds. Put the peeled garlic cloves, the sage leaves and the chili pepper together with the beans into an empty, clean Chianti bottle. Of course, you can also use other glass bottles. Add a little salt, olive oil and about half a liter of water to the bottle. Loosely plug the bottle with a linen cloth or possibly a cloth plug, so that the water vapor can escape (otherwise there will be a fiasco !). Place the bottle in an oven and cook at 120 degrees (gas level 1) for 3 hours. If necessary, add a little hot water to the bottle in case the water evaporates before the end of the cooking time. At the end of the cooking time, there should be no more water in the bottle.

Before serving, pour a little olive oil over the beans.

The beans need about 4 hours, but then they taste even better.

Serve with salami or Tuscan salami-like sausage (finocchiona).
