Remove the peel from the oranges, remove the white skin and dice. Remove the peel from the mango and also dice. Remove the skin from the pineapple, remove the wedges in the middle and also dice.

Put all the fruits together with the sugar in a saucepan, mix well and let it bubble gently for 25 min. Remove the peel from the ginger, chop it and add it to the pot. Continue to simmer until the jam gels. Season with rum and juice of one lemon and pour into hot rinsed jars with twist off lids. Close immediately and turn upside down until cold.
