Instructions:

Peel potatoes, make in salted water, drain and steam well. Mash coarsely. Rinse endive and cut into tender strips. Peel onion and cut into tiny cubes. Stir vinegar, oil, mustard, pepper and salt and mix endive and onion cubes with it. Add to the potatoes. It goes well with fried fish.

Tip: You can also cut streaky bacon into cubes, let it out and stir it together with the fat into the potato-endive mixture. Omit the oil.

Our tip: Use bacon with a fine, smoky note!
