For the enchilladas, chop the onion. Heat the olive oil in a large pot and sauté the onion over high heat. Add the meat and sauté.

Add about 3 tablespoons of tomato paste and mix well. Cut the bell bell pepper into cubes and add to the meat with the corn. Press garlic into it.

Season with salt, pepper and taco seasoning and set aside. Preheat the oven to 160 °C. Grease the baking dish.

Spread the patties out on the work surface, dividing the taco filling exactly. Fold the top and bottom of the patty in a bit, then roll it up on the sides and place it in the baking dish.

Pour the strained tomatoes over the top. Season with pepper and oregano. Finally, sprinkle the grated cheese on top and also season with pepper and oregano.

Put in the oven and bake for about 15 minutes.
