Clean the elder blossoms and pour about 8 liters of water into a clean bucket (10 liters).

Quarter the oranges and lemons, squeeze them and add them to the flowers. Weigh down with a plate and cover with a kitchen towel.

Strain after 2 days.

Heat sugar with some strained elder juice and dissolve (or put sugar directly into the bucket and dissolve, stirring often). Mix in the citric acid.

Fill the elderflower juice to the brim in well rinsed bottles, seal tightly and store in a cool as well as dark place. (If desired, pasteurize at 80 °C for approx. 30 minutes).
