For the eggnog muffins, first prepare the batter Beat the eggs and sugar until fluffy. The mixture should be very light. Then slowly stir in the oil and then the eggnog.

Add the flour mixed with baking powder to the batter and mix with a mixer. Pour the batter onto the 12 prepared paper cups. Bake at 150 degrees convection for 25-30 minutes.
