For the egg in the nest, remove the outermost layer from the leeks, wash well and dry. Now cut the leeks into thin rings as evenly as possible. On a plate, place the leek rings and sprinkle with flour. Carefully cover all the rings with flour, tapping off excess. (The flour will make the leek rings nice and crispy when deep-fried!)

Heat the oil and deep-fry the leek rings until golden, then use a piece of kitchen roll to remove the fat.

Brush a coated pan with very little olive oil. Crack the eggs and fry them in the pan over high heat to form fried eggs, then reduce the temperature until the yolks are set but still creamy. Only when the fried eggs are done, season with salt and pepper. (This will help the egg yolks retain their beautiful orange sheen!)

Arrange the fried leeks on a plate in the style of a nest, place a fried egg on each and decorate the egg in the nest with fresh, chopped herbs.
