For the egg flower soup, mix eggs and oil well, season a little and drop into the boiling bone soup with a funnel.

While doing this, constantly move the funnel back and forth. Add the finely grated onions (or leek tops).

Season with salt and pepper, soy sauce and a little vinegar and season the egg flower soup to taste.
