Instructions:

For the dough, put the flour in a large enough bowl. In the center press a bulge. In it egg and salt form. Drizzle the oil over it. Combine the water and vinegar in a cup, and stir it leisurely into the other ingredients. Work the dough well until it is smooth and shiny. Cover and let rest in a warm place until the filling is prepared.

For the filling, rinse raisins in a colander with warm water until green, drain and place on household paper to dry. peel cooked peeled potatoes and press through potato ricer onto a plate.

20 g. Heat butter in a frying pan. Brown breadcrumbs in it in 3 min. Set aside. Cream remaining butter with sugar in a baking bowl. Add egg yolks to butter-sugar mixture form.

Stir until a creamy mixture is formed. Add juice of one lemon, almond kernels, lemon zest and whipped cream. Then add the raisins and the mashed potatoes. Put egg whites in a large enough bowl. Beat until stiff. Add to the filling form and fold in loosely. Then roll out the dough on a floured kitchen towel, slide it over the back of one hand and use the other hand to stretch it out as thinly as possible. Sprinkle dough with breadcrumbs except for a 3 cm border. Spread the filling evenly on top. Roll up the strudel and place it on a baking tray greased with light butter. Melt the butter in a saucepan. Brush the strudel with it. Sprinkle with sugar.
