Rinse the leek clean and cut the stalks once, into light and green parts. Put the light parts on the side. Cut green parts into rings and roast in butter until translucent. Cut the carrots into slices and dice the potatoes. Add all this to the clear soup and cook for half an hour.

While the soup is boiling, fry the bacon in olive oil and cut the leek into thin rings.

After that the soup is cooked. It is now passed through a sieve (somehow it did not work) or pureed in a hand blender. I simply fished out the vegetables with a slotted spoon, put them into a potato press and pressed them through, then repeatedly back into the clear soup. Add the sautéed white leek rings, season with salt and pepper. Cut frankfurter sausages into small rings, add them to the soup and heat briefly. Done. In addition, we had the super delicious farmhouse bread from our mobile baker.

Our tip: Use a wonderfully spicy bacon for a delicious touch!
