Perhaps your new favorite bean dish:

1. rinse potatoes. Cook for 20-25 min in salted water in their skins. Drain potatoes, peel while warm, cut into 1 cm slices. Clean beans, cut diagonally into 3 cm pieces. Cook in salted water for 7-8 minutes, rinse and drain.

Finely dice shallots. Chop garlic finely. Stir mustard, vegetable stock, vinegar, salt, pepper and 1 pinch of sugar in a saucepan. Add shallots and garlic, make 3 min. Add potatoes and capers, infuse for half an hour in a warm stove at 50 °C, stirring often.

Cut peppers into quarters, remove seeds and cut diagonally into thin strips. Pluck off parsley leaves, chop half coarsely. Mix peppers, beans, potatoes, chopped parsley and oil, steep 10 min. Season if necessary. Fold in remaining parsley.
