Place the two duck livers in lukewarm water for 1 hour. Clean the livers and place them in an earthenware dish. Season with the salt and pepper, nutmeg and sugar and pour the port wine. Put them in the refrigerator for 12 hours, turning them from time to time in the marinade. Place the livers in a tureen (16x11x7cm) and carefully flatten.
