Duck Legs with Dandelion and Radish Salad

Instructions:

Marinate the duck legs the day before. Peel the onion and apples, cut out the apples and cut both into slices. Place the duck legs in a suitable bowl and mix with apples, onion and with wine, vinegar and remaining aromatics. Cover and place in the refrigerator. Before preparing, remove the duck legs from the marinade, dry them well. Drain the marinade. Set aside and save liquid and all solids separately.

Sauté the duck legs in oil. Sauté the onion and apple slices and extinguish with part of the liquid. Roast in the oven heated to 220 degrees until crispy, constantly adding the remaining liquid. Roast the drumsticks for about 45 minutes.

For the salad: mix sherry vinegar, mustard, chopped egg and grated potato. Rinse leaf lettuce, cut radishes into sticks and marinate. Serve drumsticks with leaf lettuce.
