For the duck leg ragout with baked apple, salt and pepper the duck legs, sear lightly on all sides and braise in fat or oil until soft (either in the oven at 160°C for about 2 hours or on the stove without a lid).

In the meantime prepare the sauce. Lightly sweat the peeled quartered shallots and sliced garlic cloves in butter and add the sugar. Add ginger and lemongrass and deglaze with orange liqueur, balsamic vinegar, cassis and red wine. Pour in some chicken stock and reduce.

For the duck leg ragout with baked apple, remove the soft duck meat from the bone, remove the skin and possibly fry it into grams as a garnish. Add the duck leg meat to the sauce and toss.
