Instructions:

(**) for a large roaster. Must be sized so that the döppekuchen is about 6-8cm high. You can easily cook a smaller mass for a correspondingly smaller roaster (***).

Remove the peel from the potatoes, rinse them and grate them as for potato pancakes, preferably with a food processor (not as fine as for potato pancakes). Squeeze grated potatoes well and pour off any potato water that has escaped.

Preheat oven to 250 degrees.

Put eggs, potatoes, onions, pepper, flour, salt and grated nutmeg in a suitable bowl and mix thoroughly, then stir in sausages and bacon.

Cover the bottom of the roaster with oil, heat on the stove and swirl the roaster so that the sides are also well greased. Put the potato dough in the roaster form, brown it briefly and then roast it in the heated oven for 2 1/2 hours, initially without a lid ((***)in a smaller preparation for four people offer an hour and a half).

If the crust becomes too brown, put a lid on and/or reduce the temperature to 200 °C.
