Instructions:

(*) Dried meat, is streaky -light smoked bacon.

Divide the rabbit or take the ready divided pieces, season with pepper with the pepper mill, wrap with the thin slices of dried meat (bacon strips) and fry in fat (take a large roaster), take out. Cut the onions, carrots, celery, garlic, tomatoes into cubes (large or small according to your preference, as the sauce is not sieved). Sauté in the fat, extinguish with the blood that may be present, roast a little and extinguish the whole with white wine, the beef broth and the spices. Put the rabbit parts in between and stew, stirring carefully and on a low flame, for another 45 to 60 min. Thicken with whipped cream.

As a side dish, all potato side dishes are suitable, vegetables are omitted as they are present in the sauce. Rapunzel salad with dried meat or sautéed mushrooms and almond kernels or rapunzel salad mixed with dandelions are excellent.

Our tip: use bacon with a subtle smoky touch!
