for the sauce : 3 tbsp olive oil

2 tbsp balsamic vinegar

2 tbsp salad mayonnaise

5 tbsp tomato ketchup

1 tbsp sweet – hot chili sauce a quarter tsp cayenne pepper 1 clove pressed garlic black pepper

salt

a little bit of sugar

Cut the roast into 3 to 4 cm long, narrow strips and place them in a sufficiently large bowl.

Add the ingredients “gherkin … Chives” and mix well.

For the salad dressing, mix all the ingredients, beat well with an egg whisk, season with pepper, salt and sugar, pour the dressing over the lettuce, mix well and leave to stand for at least an hour at room temperature with the lid closed.

Before serving, mix again and perhaps season a little more.

Serve with: fresh onion bread or baguette Drink: sufficiently well chilled Pilsner beer

Tip: As an alternative to fresh chives, you can also use the freeze-dried.
