Linzer eyes are especially popular among Christmas cookies. Whether they are decorated with wonderfully bright jam eyes or with decorations – they taste simply wonderful!

For the dough, quickly knead flour, butter, powdered sugar, vanilla sugar, salt and egg yolks into a shortcrust dough. Let the finished dough rest for two hours. Preheat the oven to 170 ÂșC hot air. Roll out the dough on a work surface sprinkled with flour. Cut out round cookies, poke three small holes in half of the discs. Place the cookie slices on a baking sheet lined with parchment paper and bake for about 12 minutes. Mix the currant jam with the rum. Spread the full cookie slices with currant jam. Sprinkle the perforated discs for the Linzer eyes with powdered sugar and stick them on the full cookie discs.

Alternatively, you can use many other cookie cutters, a different type of jam, or sprinkles, sugar pearls and the like. Let your imagination run wild!
