Cut the dates lengthwise and remove the stones. Cut the dates into small sticks, set aside 50 g for garnish. Whip the egg whites with the juice of one lemon until stiff peaks form. Gradually add the powdered sugar and whip until the powdered sugar is completely dissolved. Fold in the almond and date sticks. Place the wafers on the baking tray and make mounds with two teaspoons.
