Danish Apple Pie I

Defrost the puff pastry, rinse the apples, remove the skin, cut into quarters and remove the core. Cut the quarters into slices and marinate with Calvados. Preheat electric oven to 225 degrees Celsius.

Place a good 2/3 of the puff pastry sheets on top of each other and roll out. Line a greased, shallow pie pan (pie dish) with them.

Mix eggs, mascarpone, sugar, cinnamon and marzipan. Season again with cinnamon and sugar.

Spread the apple slices in rosettes on the puff pastry base, then add the mascarpone mixture on top. Roll out the rest of the pastry and cut into 1 cm wide strips, then place them on the cake in a grid pattern. Or use a lattice cutter (see page 89) to cut out a lattice and place it on top.

Brush the pastry strips with the beaten egg yolk and bake in the heated oven on the second rack from the bottom for 25-30 minutes (gas: level 4), if necessary cover with parchment paper for the last 10 minutes.

Tip: Cinnamon gives dishes a wonderful sweet and spicy note!
