Instructions:

For the curry with red lentils, peel and chop the garlic. Clean and chop the ginger and chili. Put everything in a mortar with some olive oil and grind to a paste.

Peel and chop the onion. Clean leek and cut into fine rings. Heat oil in a pan, lightly fry chicken cubes and onion.

Add herb paste and curry, stir everything until the fragrance of the herbs comes out. Add tomato paste, leek, fish sauce and juice of 1/2 lime.

After about 5 minutes, add the coconut milk with the uncooked lentils. Mix everything together well. If necessary, season with a little more fish sauce.

Cover and simmer gently for about 10 minutes. Check if the lentils are cooked and season with lime juice or salt and pepper if necessary. Divide between 2 warmed bowls.
