For the currant chutney, wash and sort the currant, peel and finely dice the shallots. Wash the chili pepper, cut in half, remove the seeds and finely chop the chili pepper.

Sauté the shallots in the olive oil, add the currant. Also add the cinnamon stick, cloves, honey, lemon zest and chopped chili.

Simmer everything together gently for about 20 minutes. After 10 minutes, remove the cinnamon stick and cloves.

Then stir in the grated apple, the lemon juice and season the currant chutney with salt and pepper.
