Instructions:

Soak the raisins in rum for one hour.

Mix together the low-fat curd, sugar, olive oil, lemon zest and egg whites. Fold in the raisins with the rum.

Lay out the puff pastry, cover one side with filling, fold in both long sides 1 cm and roll up.

Brush the curd strudel with egg or water and bake in the oven at 190°C for half an hour.
