For the curd cheese golaches, roll out the puff pastry and place on top. Mix curd cheese, yolks, lemon zest, lemon juice and powdered sugar until smooth.

Mix in raisins if desired, cut the puff pastry into 4×4 squares. Place a little curd mixture in the center of each, fold the corners into the center and secure with a piece of dough.

Brush with egg white and bake the curd cheese golaches in the oven at 180 °C top/bottom heat for about 15 minutes.
