For the curd apricot strudel, knead a strudel dough from flour, salt, egg yolk, vinegar, oil and lukewarm water. Knead dough until it is smooth and silky. Let the dough rest for a good 1/2 hour.

For the curd filling, whisk egg yolks, powdered sugar, vanilla sugar and lemon zest until foamy. Stir in curd, cornstarch, melted butter with a wooden spoon.

Divide strudel dough into two parts. Spread out on a floured strudel cloth, cut off the edges and spread the curd mixture on top. Place halved apricots on top. Fold in the dough and roll up tightly. Proceed in the same way with the second strudel.

Place the strudel on a greased baking tray with the seam facing down. Brush with melted butter and bake the curd cheese and apricot strudel at 180°C for about 50 minutes.
