For the curd-cherry strudel, knead a strudel dough from flour, salt, egg yolk, vinegar, oil and lukewarm water. Knead dough until it is smooth and silky.

Let the dough rest for a good 1/2 hour. For the curd filling, whisk egg yolks, powdered sugar, vanilla sugar, lemon zest and rum until foamy. Stir in curd, cornflour and melted butter with a wooden spoon.

Divide strudel dough into two parts. Spread out on a floured strudel cloth, cut off the edges and spread the curd mixture on top. Place the halved cherries on top. Fold the dough and roll up tightly.

Proceed in the same way with the second strudel. Place the strudel on a greased baking tray with the seam facing down. Brush with melted butter and bake the curd cheese and cherry strudel at 180°C for about 50 minutes.
