Instructions:

First prepare the pancake batter. For this, mix milk, flour and egg well with a whisk until the dough consistency is smooth and creamy.

Depending on the consistency, add small amounts of mineral water (tap water is also possible). The dough should not become too liquid.

Melt very little butter in a pan preheated on the hob (I use a 15 cm diameter pan).

Pour a small soup ladle full of pancake batter into the pan and fry until golden brown on both sides.

For the curd cheese banana cream, mash the bananas in a bowl and mix well with curd cheese, raisins and honey. Spread a tablespoon of curd cheese-banana cream on the pancake, then roll up the pancake.

Garnish with elderberry toast and powdered sugar and serve.
