For the crumble marble cherry pie, separate the eggs. Beat the egg whites to snow. Beat the yolks, powdered sugar, butter, vanilla sugar and rum until fluffy. Sift flour with baking powder and stir into the yolk mixture with the milk.

Divide the dough in half and stir in the persimmon powder in one half of the dough. Divide the beaten egg whites in half and fold each into the white mixture and into the cocoa mixture. Spread dough on a baking sheet (38 x 25 cm) lined with baking paper and draw a marbling with a fork.

Spread pitted cherries on top.

For the crumble, crumble butter, powdered sugar, vanilla sugar, flour and cinnamon with the palms of your hands and spread over the cherries.

Bake the crumble marble cherry cake at 180 degrees until golden brown.
