For the crunchy muesli, first preheat the oven to 180 °C. Melt the coconut oil.

In a large enough bowl, mix the oats, nuts, pumpkin seeds, salt and cinnamon. Add maple syrup and coconut oil and mix everything well.

Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for 10 minutes, then flip and continue baking for another 5-10 minutes. Keep checking to make sure the granola doesn’t get too dark.

Remove the crunchy granola from the oven, let cool and mix with the raisins.
