For Creole fish, cut fish fillets into bite size pieces and drizzle with lemon juice. In a non-stick frying pan, heat the oil.

Saute the onion and bell bell pepper over low heat until soft. Add the cayenne pepper and garlic.

Stir in the cod with the tomato chunks, bring to a boil and simmer gently, covered, until the fish is falling apart, about 5 minutes.

Creole fish is served with boiled rice or potatoes.
