For the Crema catalana pour milk into a saucepan, add cinnamon sticks and lemon zest and let everything infuse over low heat for about 10-15 minutes.Meanwhile, in a bowl, mix eggs with egg yolks and sugar. Mix starch flour with a little cold milk or water, add and beat everything until foamy.

Remove the milk from the heat, remove the cinnamon sticks and gradually stir the egg mixture into the milk. Return to the stove and heat slowly over low heat, but do not bring to a boil (the egg yolks will flocculate!). Stir constantly while doing this. Once the cream has become nice and creamy, remove from heat and refrigerate.

Before serving, pour the Crema catalana into small ramekins or ovenproof plates and sprinkle with sugar. Preheat the oven to the highest setting, turn on the top heat or grill and caramelize the cream until the sugar layer is nice and golden brown and serve immediately.
