For the cream-apple pancake, first peel the apple and cut into thin wedges. Separate the eggs. Mix sour cream with yolks, powdered sugar, flour and salt to a smooth batter. Beat egg whites with a pinch of salt until stiff and fold in.

Melt butter in a pan, add granulated sugar and stir to dissolve. Add the apple slices and caramelize.

Pour the batter on the apple wedges, cover, bake, turn over and cut into pieces. Sprinkle the cream-apple pancake with powdered sugar and serve.
