For the cranberry foam slices, preheat the oven to 160 °C hot air. Separate eggs, beat egg whites to snow. Beat the yolks with the sugar and vanilla sugar until foamy. Add water and rum.

Slowly add oil and continue to stir vigorously. Melt chocolate over steam and fold in. Finally, mix flour with baking powder and fold in, then fold in the snow.

Pour the dough onto a baking tray and bake for about 15-20 minutes. Let the cake cool down.

For the cream, whip 2 cups of whipped cream with cream stiffener until stiff. Beat down 2 packets of vanilla sugar and fold in a jar of cranberry jam. Soak gelatine in cold water, squeeze out, dissolve in a little liquid and fold into the mixture.

Spread the top mixture on the cooled base and you’re done!
