Corn flour, for for dusting 1 Thin Thin s French. White bread, or possibly vegetable oil, for frying

Toast sesame seeds in a dry frying pan until brown, shaking so nothing burns. Soak dried crab tails (if using) in warm water until soft. Drain well and squeeze out any water left over. Chop into small pieces. Mix dried and fresh ginger, garlic, crab tails, salt, egg, onion and black pepper and knead with hands to form a dough. The mixture should be firm but still spreadable. Cut French white bread (baguette) into one-inch-thick slices or bread slices into triangles or cut with pastry shapes. Spread shrimp mixture evenly on bread and press sesame seeds firmly into shrimp mixture with the back of a wooden spoon. Refrigerate for at least two hours.

Heat enough oil to finish breads, shrimp side down, in floating fat. After one minute, use a fish lifter to carefully turn to the other side and bake on the other side for one minute as well. Drain on kitchen roll and bring to table hot.
