For the couscous with pumpkin and nuts, grate the zest of the orange and squeeze the juice.

Soak the raisins in the orange juice for 20 minutes. Remove the seeds from the pumpkin and cut into cubes. Fry almonds and pistachios in hot oil until almonds are light brown all around. Add pumpkin pieces and pour in soup. Mix in Ras el Hanout and simmer covered for 10 minutes.

Turn off the heat, sprinkle in the couscous, add the softened raisins with the orange juice, stir briefly and cover and let swell for 10 minutes.

Season the couscous with pumpkin and nuts with salt and serve sprinkled with parsley.
